THIS recipe is for a small piece of gammon, but the glaze can be increased for a whole gammon on the bone. Gammon is generally quite salty so a whole gammon should be soaked overnight in cold water. A small piece can be cooked as in the recipe below. We used orange marmalade but you could also use orange and ginger marmalade.
