TRYING to get a seat at one of the pavement tables at Sing Heung Yuen Food Stall Number 2 is not for the faint-hearted. Hong Kong diners use their elbows to jostle for the best seats. Timid tourists have no chance.

But those who manage to grab a space among the lunchtime crowds beneath tatty tarpaulin sheets on one of the city's oldest streets will find time frozen. 'No difference. Tastes the same,' says owner Irene, who, with her mother, has been serving up pork chop buns and beef noodles here for the past 30 years.
