Recipe on page 51 CREAMY RISOTTO RICE PUD SERVES 6 1 vanilla pod slit 140g arborio risotto rice 140g golden caster sugar 1 litre whole creamy milk .Have ready a deep baking dish about 1.8 litre capacity (such as an old-fashioned pie dish or an ovenproof casserole). Preheat the oven to 140C/120C fan/gas 1. .Open out the vanilla pod and scrape out the seeds. Place the vanilla seeds together with the rice, the sugar and a little milk in the ovenproof dish and stir thoroughly to distribute the seeds. Add the rest of the milk and stir again, place the slit vanilla pod in the centre and cook in the oven for 31/2-4 hours, by which time the pudding should be sealed with a thin golden skin.
