TO COME into the house after a hectic, draining day and find a casserole that's been simmering and infusing for a few hours, generously wafting its heavenly, seductive aromas, is probably what most parents would consider bliss - with nothing more to do than grab a knife and fork and a comfy seat.

Slow-cooking seems to have gone out of fashion. Perhaps the only people to have clung on to this culinary skill are those with an Aga, who can just pop a casserole into the cool oven and leave it to do its work.

But these days, when ovens have timers (if your oven doesn't have one, simply buy a timer socket adapter) anyone can prepare a casserole for when they arrive home. Alternatively, you can readily buy the very-easy-to-use electric slow-cookers. There's a great deal to be said for bringing this tradition back into our kitchens.
