THESE are delicious served with yellow yoghurt, which is made by mixing natural yogurt with turmeric and chopped mint leaves.

SERVES 4 tbsp olive oil onions, sliced size piece fresh root grated tbsp garam masala can cherry tomatoes can chickpeas, drained bag spinach leaves chapatis 1. Heat the oil in a large frying pan, then gently cook the onions and ginger for five minutes until beginning to soften. Stir in the garam masala, cook for one more minute, then add the tomatoes and chickpeas.
